  1. Otti

Bruno, deine Küche riecht wie ein Labor! Was blubbert denn da in all den Einmachgläsern?

    Translation

Bruno, your kitchen smells like a lab! What's bubbling away in all those jars?

  2. Bruno

    Translation

That's fermentation, dear Otti. I ferment everything I can get my paws on - basically the microorganisms do the cooking, and I just wait.

  3. Otti

Bakterien im Essen? Klingt, ehrlich gesagt, nicht gerade appetitlich.

    Translation

Bacteria in food? Honestly, that doesn't sound very appetising.

  4. Bruno

Gute Bakterien!

    Translation

Good bacteria! They turn the sugar in the vegetables into acid. That makes them keep longer and, on top of that, easier to digest.

  5. Otti

    Translation

And how can you tell whether the fermentation has even started?

  6. Bruno

    Translation

See the little bubbles? The cabbage has been fermenting since Monday. I only salted it and put it in brine, nothing more.

  7. Otti

Darf ich mal probieren? … Hm. Säuerlich, ziemlich salzig - und irgendwie lecker.

    Translation

May I try some? … Hm. Slightly sour, pretty salty - and somehow tasty.

  8. Bruno

    Translation

I won't accept "tasty". Let it glide slowly over your palate: can you tell how the flavour changes?

  9. Otti

Stimmt.

    Translation

True. First a fresh sourness, then something savoury, and at the end almost bitter. I'd never have expected that of sauerkraut.

  10. Bruno

    Translation

And this one is only a week old. In a month the flavour will be rounder and deeper, you'll see.

  11. Otti

    Translation

A whole month? You can't hold out that long yourself, of all people!

  12. Bruno

Tja, Otti: Gut Ding will Weile haben.

    Translation

Well, Otti: good things take time. Until then, just take a jar of kimchi with you - that one's ready.
